Roasted Summer Mixed Vegetable Medley

  • Zucchini

  • Yellow Squash

  • Tomatoes

  • Olive Oil

  • Salt and pepper

  • Garlic Powder

  • Fresh Lemon Juice


  1. Preheat the oven to 375°

  2. Wash produce

  3. Cut the zucchini and yellow squash into similar sized pieces

  4. Tomatoes can be cut larger, or use cherry tomatoes

  5. Toss items in a bowl with olive oil to coat and season with salt, pepper, & garlic powder

  6. Place items on a baking sheet

  7. Roast for 20-30 minutes or until desired doneness

  8. You may need to toss vegetables half way through due to caramelization

  9. Once out of the oven drizzle fresh lemon juice
