INGREDIENTS:

1 ½ tbsp fresh lemon juice

1 ½ tbsp red wine vinegar

3 ½ tbsp extra virgin olive oil

1 tsp honey (local)

1 ½ tsp garlic, minced

¼ cup cilantro, chopped

¼ cup parsley, chopped

½ tsp oregano, dried

Salt and freshly ground black pepper

Avocado (1 Florida or 2 Hass), large chunks

½ small red onion, sliced thin

16oz cherry tomatoes, halved

1 medium English cucumber, chopped
DIRECTIONS:

In a small bowl mixing bowl whisk together lemon juice, vinegar, olive oil, honey, garlic, cilantro, parsley, oregano, and season with salt and pepper to taste.

In a large bowl combine avocado, red onion, tomato, cucumber, and dressing.
