Chopped Summer Vegetable Salad

INGREDIENTS:

  • 1 cucumber, seeded and cut into ¼ inch pieces

  • 1 can of no salt added corn

  • 2 bell peppers, cut into ¼ inch pieces

  • 1 small red onion, cut into ¼ inch pieces

  • a handful each of fresh basil and fresh parsley, chopped

  • ¼ cup olive oil

  • ½ cup red wine vinegar

  • 1 tsp sugar

  • salt and pepper to taste

DIRECTIONS:

  1. Place vegetables and herbs into a large bowl and toss to mix.

  2. Place olive oil, vinegar, and sugar in a small bowl and whisk.

  3. Pour vinaigrette over over the vegetables and toss.

  4. Season with salt and pepper to taste.

  5. Best if made the night before and chilled.
