INGREDIENTS

1 ½ lbs chicken thighs with skin (about 3-4 thighs)

2 tbsp extra virgin olive oil

Spice rub (or seasoning of your choice)
DIRECTIONS

Preheat the oven to 375 degrees. Line a large baking sheet with foil for easy cleanup and set aside. Place a rack on top of the lined baking sheet, if you have one.

Remove the chicken thighs from their packaging and pat them dry with paper towels. Arrange the chicken thighs on the prepared baking sheet and top with spice rub.

Bake chicken in a preheated oven for 40-50 minutes, until the skin is crispy.*
*Chicken should reach an internal temperature of 165 degrees before consuming.
Spice Rub

½ tsp ground coriander

¼ tsp ground cardamom

1 ½ tsp salt
