INGREDIENTS:

1 cucumber, seeded and cut into ¼ inch pieces

1 can of no salt added corn

2 bell peppers, cut into ¼ inch pieces

1 small red onion, cut into ¼ inch pieces

a handful each of fresh basil and fresh parsley, chopped

¼ cup olive oil

½ cup red wine vinegar
-
1 tsp sugar

salt and pepper to taste
DIRECTIONS:

Place vegetables and herbs into a large bowl and toss to mix.

Place olive oil, vinegar, and sugar in a small bowl and whisk.

Pour vinaigrette over over the vegetables and toss.

Season with salt and pepper to taste.

Best if made the night before and chilled.
